Brewing Herbal / Tisane Hot Tea
For best flavor, we recommend:
- Steeping the loose leaves for 5 to 7 minutes in very hot – but not boiling – water.
- Promptly remove the spent tea leaves from the brew, to avoid over extraction and bitterness.
Brewing Iced Tea
Large Batch
- For every half gallon (64 oz.) batch: use 1 – 1.25 oz of loose tea in a paper filter
- Brew a half-gallon batch into a 1-gallon heat-resistant container. Allow tea to cool uncovered on the counter for 2 hours.
- Store tea base in the refrigerator
Large Batch, Immediate Cooling
- For every half gallon (64 oz.) batch: use 2 oz of loose tea in a paper filter
- Brew a half-gallon batch into a 1-gallon heat-resistant container half full with ice. Hot tea melts, chilled, and is diluted instantly by ice. Stir well to completely dissolve ice.
- Store tea base in the refrigerator
NOTE:
- Brew today what you will sell tomorrow;
- Do not keep brewed iced tea for longer than 24 hours.
